Instructions:
- 1. Press the tofu: Wrap the tofu block in several layers of paper towels and place a heavy object (like books or a cast iron skillet) on top for at least 30 minutes to remove excess water. This ensures a crispier tofu.
- 2. Prepare the glaze: In a small saucepan, whisk together soy sauce, mirin, sake, brown sugar, cornstarch, sesame oil, ginger, and garlic. Add water and bring to a simmer over medium heat, whisking constantly until the sauce thickens slightly (about 2-3 minutes).
