
Lamb Kofta with Saffron Rice Recipe

Ingredients:
- - 1 lb ground lamb
- - 1/2 cup finely chopped onion
- - 1/4 cup finely chopped cilantro
- - 1 tbsp ground cumin
- - 1 tsp ground coriander
- - 1/2 tsp turmeric powder
- - 1/4 tsp cayenne pepper (optional)
- - 1/4 cup breadcrumbs
- - 1 large egg, lightly beaten
- - Salt and pepper to taste
- - 1 tbsp vegetable oil
- - 1 cup basmati rice
- - 2 cups water
- - 1/2 tsp saffron threads
- - 1/4 cup chopped pistachios (for garnish)
Instructions:
- 1. In a large bowl, combine the ground lamb, onion, cilantro, cumin, coriander, turmeric, cayenne pepper (if using), breadcrumbs, egg, salt, and pepper. Gently mix with your hands until just combined. Do not overmix.
- 2. Shape the lamb mixture into 1-inch meatballs (koftas). Aim for about 12-15 koftas.
- 3. Heat the vegetable oil in a large skillet over medium-high heat. Add the koftas and cook for about 5-7 minutes per side, or until browned and cooked through. Internal temperature should reach 160°F (71°C).
- 4. While the koftas are cooking, prepare the saffron rice. Rinse the basmati rice under cold water until the water runs clear.
- 5. In a medium saucepan, combine the rinsed rice, water, and saffron threads. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the water is absorbed.
- 6. Once the koftas are cooked, remove them from the skillet and set aside. Fluff the saffron rice with a fork.
- 7. To serve, spoon the saffron rice onto a serving platter. Arrange the lamb koftas on top of the rice.
- 8. Garnish with chopped pistachios.
