Ingredients:

  • - 1 block (14 oz) extra-firm tofu, pressed and cubed
  • - 1 tbsp olive oil
  • - 1 small red onion, thinly sliced
  • - 2 cloves garlic, minced
  • - 1 red bell pepper, thinly sliced
  • - 1 cup broccoli florets
  • - 1/2 cup snow peas
  • - 1/4 cup soy sauce (low sodium preferred)
  • - 2 tbsp honey
  • - 1 tbsp rice vinegar
  • - 1 tsp grated ginger
  • - 1/2 tsp sesame oil
  • - 1/4 tsp red pepper flakes (optional)
  • - 1/4 cup chopped cilantro
  • - Sesame seeds for garnish
  • - Cooked Jasmine rice for serving

Instructions:

  1. 1. Preheat oven to 400°F (200°C). Press the tofu to remove excess water using paper towels or a tofu press for at least 15 minutes. Cut the pressed tofu into 1-inch cubes.
  2. 2. Heat olive oil in a large oven-safe skillet over medium-high heat. Add the red onion and cook for 3-4 minutes, until softened. Add the garlic and cook for another minute until fragrant.
  3. 3. Add the bell pepper, broccoli, and snow peas to the skillet. Stir-fry for 5-7 minutes, until the vegetables are tender-crisp.
  4. 4. In a small bowl, whisk together the soy sauce, honey, rice vinegar, ginger, sesame oil, and red pepper flakes (if using).
  5. 5. Add the tofu cubes to the skillet and stir to combine with the vegetables. Pour the sauce over the tofu and vegetables, ensuring everything is evenly coated.
  6. 6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the tofu is golden brown and the sauce has thickened slightly. Stir halfway through baking for even cooking.
  7. 7. Remove the skillet from the oven and stir in the chopped cilantro.
  8. 8. Serve the Tofu Starlight Symphony hot over a bed of cooked jasmine rice, garnished with sesame seeds.
