Ingredients:
- - 1 block (14 oz) extra-firm tofu, pressed and cubed
- - 1 tablespoon sesame oil
- - 1 red bell pepper, thinly sliced
- - 1 green bell pepper, thinly sliced
- - 1 onion, thinly sliced
- - 2 cloves garlic, minced
- - 1 inch ginger, minced
- - 1 cup broccoli florets
- - 1/2 cup snow peas
- - 1/4 cup soy sauce
- - 2 tablespoons rice vinegar
- - 1 tablespoon honey
- - 1 teaspoon sesame seeds
- - 1/2 teaspoon red pepper flakes (optional)
- - Cooked rice, for serving
Instructions:
- 1. Press the tofu: Wrap the tofu block in several layers of paper towels and place a heavy object (like books) on top for at least 30 minutes to remove excess water. This will help it crisp up during cooking. Cube the pressed tofu into 1-inch pieces.
- 2. Prepare the vegetables: Thinly slice the bell peppers and onion. Mince the garlic and ginger. Prepare the broccoli florets and snow peas.
- 3. Stir-fry the tofu: Heat the sesame oil in a large wok or skillet over medium-high heat. Add the tofu cubes and stir-fry for 5-7 minutes, until golden brown and slightly crispy on all sides. Remove the tofu from the wok and set aside.
- 4. Sauté the vegetables: Add the onion to the wok and stir-fry for 2-3 minutes, until softened. Add the bell peppers and stir-fry for another 2-3 minutes.
- 5. Add aromatics: Add the minced garlic and ginger to the wok and stir-fry for 30 seconds, until fragrant. Be careful not to burn the garlic.
- 6. Combine and simmer: Return the tofu to the wok. Add the broccoli and snow peas. Stir in the soy sauce, rice vinegar, honey, sesame seeds, and red pepper flakes (if using). Stir-fry for 2-3 minutes, until the vegetables are tender-crisp and the sauce has thickened slightly.
