Ingredients:
- - 1 block (14 oz) extra-firm tofu, pressed and cubed
- - 1 tbsp sesame oil
- - 1 red bell pepper, thinly sliced
- - 1 green bell pepper, thinly sliced
- - 1 onion, thinly sliced
- - 2 cloves garlic, minced
- - 1 inch ginger, grated
- - 1/2 cup soy sauce (low sodium preferred)
- - 1/4 cup honey
- - 2 tbsp rice vinegar
- - 1 tbsp cornstarch
- - 2 tbsp water
- - 1/4 cup sesame seeds
- - 2 green onions, thinly sliced (for garnish)
- - Cooked rice, for serving
Instructions:
- 1. Press the tofu: Wrap the tofu block in paper towels and place a heavy object on top for at least 30 minutes to remove excess water. Cut into 1-inch cubes.
- 2. Prepare the sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch, and water until smooth. Set aside.
- 3. Stir-fry the vegetables: Heat sesame oil in a large wok or skillet over medium-high heat. Add the onion and bell peppers and stir-fry for 5-7 minutes, until slightly softened but still crisp.
- 4. Add garlic and ginger: Add the minced garlic and grated ginger to the wok and stir-fry for 30 seconds, until fragrant.
- 5. Add tofu: Add the pressed tofu cubes to the wok and stir-fry for 5-7 minutes, until lightly browned on all sides.
- 6. Pour in sauce: Pour the prepared sauce over the tofu and vegetables. Stir constantly until the sauce thickens and coats everything evenly (about 2-3 minutes).
- 7. Garnish and serve: Remove from heat and sprinkle with sesame seeds and sliced green onions. Serve hot over cooked rice.
- 8. Plate and present: Serve the stir-fry immediately. A visually appealing presentation would include mounding the stir-fry in the center of a plate, with a small pool of extra sauce around the base. The vibrant colors of the peppers and the contrasting green onions against the golden-brown tofu should be highlighted.
