Ingredients:
- - 2 cups all-purpose flour
- - 1/2 cup milk, lukewarm
- - 1/4 cup sugar
- - 2 tablespoons ghee (clarified butter)
- - 1 teaspoon yeast
- - 1/4 teaspoon saffron strands, crushed
- - 1/4 teaspoon cardamom powder
- - 1/4 teaspoon rose water
- - Pinch of salt
- - 2 tablespoons milk, for brushing
- - Sesame seeds, for garnish
Instructions:
- 1. In a large bowl, combine lukewarm milk, sugar, and yeast. Let stand for 10 minutes until foamy. This activates the yeast, crucial for a light and airy dough.
- 2. Add ghee, saffron strands, cardamom powder, rose water, and salt to the yeast mixture. Stir well to combine. The saffron adds a vibrant color and a subtle flavor.
- 3. Gradually add the all-purpose flour, mixing with a wooden spoon until a soft dough forms. The dough should be slightly sticky but not too wet.
- 4. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Kneading develops the gluten, resulting in a softer texture.
- 5. Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 1-1.5 hours, or until doubled in size. A warm place, like a slightly turned-on oven, helps with rising.
- 6. Once the dough has risen, punch it down gently to release the air. Divide the dough into 12 equal portions. Roll each portion into a 6-inch long rope.
- 7. Gently coil each rope into a loose spiral or roll shape and place them on a baking sheet lined with parchment paper, leaving some space between each roll. The coils should be loosely packed for even baking.
- 8. Preheat oven to 375°F (190°C). Brush the tops of the rolls with the remaining 2 tablespoons of milk and sprinkle with sesame seeds. Bake for 20-25 minutes, or until golden brown. Keep an eye on them to prevent burning.
