Ingredients:
- - 1 kg mutton, cut into 2-inch cubes
- - 2 large onions, finely chopped
- - 4 cloves garlic, minced
- - 1 inch ginger, minced
- - 2 green chilies, finely chopped
- - 1 tsp turmeric powder
- - 2 tsp coriander powder
- - 1 tsp cumin powder
- - 1/2 tsp red chili powder (adjust to taste)
- - 1/2 tsp garam masala
- - 1/4 tsp saffron strands, soaked in 2 tbsp warm milk
- - 1 cup plain yogurt
- - 2 tbsp vegetable oil
- - 1/2 cup water
- - Salt to taste
- - Fresh coriander leaves, for garnish
- - 1 tbsp ghee (clarified butter), optional
Instructions:
- 1. Marinate the mutton: In a large bowl, combine the mutton cubes with yogurt, 1 tbsp of the minced ginger, 1 tsp of the minced garlic, 1 green chili (finely chopped), turmeric powder, coriander powder, cumin powder, red chili powder, garam masala, and salt. Mix well and let it marinate for at least 4 hours, or preferably overnight in the refrigerator. This allows the flavors to meld and tenderizes the meat.
- 2. Sauté the onions: Heat the vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat. Add the remaining chopped onions and sauté until golden brown, about 8-10 minutes. Stir frequently to prevent burning.
- 3. Add aromatics: Add the remaining minced ginger and garlic, and the chopped green chili to the pot. Sauté for another minute until fragrant. Be careful not to burn the garlic.
- 4. Bloom the spices: Add the remaining turmeric powder, coriander powder, cumin powder, and red chili powder to the pot. Sauté for 30 seconds, stirring constantly, until the spices are fragrant and their aroma fills the kitchen.
- 5. Add the marinated mutton: Add the marinated mutton cubes to the pot. Brown the mutton pieces evenly on all sides, about 8-10 minutes. This step helps to seal in the juices.
- 6. Simmer the Rogan Josh: Pour in 1/2 cup of water, cover the pot, and reduce the heat to low. Simmer for at least 1.5 - 2 hours, or until the mutton is incredibly tender and easily falls off the bone. Stir occasionally to prevent sticking. If the sauce becomes too thick, add a little more water.
- 7. Finish and Garnish: Stir in the saffron milk and the ghee (if using). Simmer for another 5 minutes to allow the flavors to meld. Garnish with fresh coriander leaves.
