Ramzan Special Date and Walnut Pudding Recipe
Description:
A rich, dark brown pudding studded with glistening dark brown dates and speckled with light brown walnuts. The bread cubes are softened and infused with the creamy, spiced milk mixture, creating a moist and aromatic texture. A slight sheen from the butter and honey creates a visually appealing contrast against the warm brown tones. The pudding is served in a rustic, homey-style dish, enhancing its comforting appeal. The scent of cardamom and cloves fills the air, creating a warm and inviting atmosphere.
Ingredients:
- - 1 cup pitted Medjool dates, chopped
- - 1/2 cup walnuts, roughly chopped
- - 1/2 cup milk (whole milk preferred)
- - 1/4 cup sugar (adjust to taste)
- - 2 tablespoons unsalted butter
- - 1 teaspoon cardamom powder
- - 1/4 teaspoon ground cloves
- - Pinch of saffron threads
- - 1/4 cup rose water (optional)
- - 4 slices of bread, crusts removed and cubed
Instructions:
- 1. In a small saucepan, combine milk, sugar, butter, cardamom powder, cloves, and saffron threads. Bring to a gentle simmer over medium heat, stirring occasionally, until the sugar dissolves completely and the mixture is slightly thickened (approximately 5-7 minutes). Remove from heat and stir in rose water, if using. Let it cool slightly.
- 2. In a separate bowl, gently combine the chopped dates and walnuts.
- 3. Add the cooled milk mixture to the date and walnut mixture, ensuring all the ingredients are well coated. Let this sit for 10 minutes to allow the dates to soften and absorb the flavors.
- 4. Preheat your oven to 350°F (175°C). Lightly grease a small oven-safe dish (approximately 8x8 inches).
- 5. Add the cubed bread to the date and walnut mixture, gently stirring to ensure the bread is evenly coated with the milk mixture.
- 6. Pour the entire mixture into the prepared oven-safe dish. Spread it evenly.
- 7. Bake for 25-30 minutes, or until the pudding is golden brown on top and the bread is cooked through. You can check for doneness by inserting a toothpick into the center; it should come out clean.
- 8. Remove from the oven and let the pudding cool slightly before serving. You can serve it warm or cold. It’s delicious garnished with a sprinkle of extra chopped walnuts and a drizzle of honey.
