Ingredients:
- - 1 tbsp olive oil
- - 1 large onion, chopped
- - 2 carrots, chopped
- - 2 celery stalks, chopped
- - 1 lb ground beef
- - 1 lb ground pork
- - 1 tsp dried thyme
- - 1 tsp dried rosemary
- - 1/2 tsp salt
- - 1/4 tsp black pepper
- - 1 cup beef broth
- - 1 (10.75 ounce) can condensed cream of mushroom soup
- - 2 cups mashed potatoes (about 4 medium potatoes)
- - 1/4 cup grated cheddar cheese
Instructions:
- 1. Preheat oven to 375°F (190°C). Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
- 2. Add ground beef and pork to the skillet and cook, breaking it up with a spoon, until browned, about 8-10 minutes. Drain off any excess grease.
- 3. Stir in thyme, rosemary, salt, and pepper. Cook for 1 minute more.
- 4. Pour in beef broth and cream of mushroom soup. Bring to a simmer, then reduce heat to low and cook for 5 minutes, allowing the sauce to thicken slightly.
- 5. Spread mashed potatoes evenly over the meat mixture. Make sure to cover the entire surface.
- 6. Sprinkle grated cheddar cheese over the top of the mashed potatoes.
- 7. Bake for 20-25 minutes, or until the potatoes are golden brown and heated through and the filling is bubbly. If the top starts to brown too quickly, loosely cover with foil.
