Ingredients:

  • - 1 tbsp olive oil
  • - 1 large onion, chopped
  • - 2 carrots, chopped
  • - 2 celery stalks, chopped
  • - 1 lb ground beef
  • - 1 lb ground pork
  • - 1 tsp dried thyme
  • - 1 tsp dried rosemary
  • - 1/2 tsp salt
  • - 1/4 tsp black pepper
  • - 1 cup beef broth
  • - 1 (10.75 ounce) can condensed cream of mushroom soup
  • - 2 cups mashed potatoes (about 4 medium potatoes)
  • - 1/4 cup grated cheddar cheese

Instructions:

  1. 1. Preheat oven to 375°F (190°C). Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. 2. Add ground beef and pork to the skillet and cook, breaking it up with a spoon, until browned, about 8-10 minutes. Drain off any excess grease.
  3. 3. Stir in thyme, rosemary, salt, and pepper. Cook for 1 minute more.
  4. 4. Pour in beef broth and cream of mushroom soup. Bring to a simmer, then reduce heat to low and cook for 5 minutes, allowing the sauce to thicken slightly.
  5. 5. Spread mashed potatoes evenly over the meat mixture. Make sure to cover the entire surface.
  6. 6. Sprinkle grated cheddar cheese over the top of the mashed potatoes.
