Ingredients:

  • - 1/2 lb chorizo sausage, casings removed

  • - 1 green bell pepper, chopped
  • - 1 red bell pepper, chopped
  • - 1 (15 ounce) can black beans, rinsed and drained
  • - 1 (15 ounce) can corn, drained
  • - 1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
  • - 1 cup beef broth
  • - 1 tablespoon chili powder
  • - 1 teaspoon cumin
  • - 1/2 teaspoon smoked paprika
  • - 1/4 teaspoon cayenne pepper (optional)
  • - Salt and pepper to taste
  • - 1 cup shredded cheddar cheese
  • - 1/4 cup chopped cilantro
  • - Tortilla chips, for serving
  • - Sour cream, for serving (optional)

Instructions:

  1. 1. In a large skillet or Dutch oven, brown the ground beef and chorizo over medium-high heat, breaking it up with a spoon. Drain off any excess grease. This should take approximately 8-10 minutes.
  2. 2. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. 3. Add the chopped bell peppers and cook for 3-5 minutes, until slightly tender-crisp.
