Ingredients:

  • - 1/2 teaspoon smoked paprika

  • - 2 tablespoons butter
  • - 2 large eggs, fried to your liking

Instructions:

  1. 1. Heat olive oil and butter in a large skillet over medium-high heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. 2. Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned, approximately 8-10 minutes. Drain off any excess grease.
  3. 3. Stir in the diced potatoes, red and green bell peppers, thyme, smoked paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally, to allow the spices to bloom.
  4. 4. Reduce heat to medium-low, cover the skillet, and cook for 15-20 minutes, or until the potatoes are tender and cooked through, stirring occasionally to prevent sticking. If the mixture becomes too dry, add a tablespoon or two of water.
