Lamb Kofta with Mint-Yogurt Sauce Recipe

Description:

A platter of perfectly grilled lamb koftas, their surfaces deeply browned and slightly charred, sits nestled amongst a bed of vibrant green cilantro. The glistening lamb cylinders are generously coated in a cool, creamy, and bright green mint-yogurt sauce. The sauce, punctuated with flecks of fresh mint, offers a striking contrast to the rich brown of the grilled meat. A few lemon wedges add a splash of sunny yellow, while extra cilantro sprigs scattered across the plate complete the visual appeal. The scene is one of rustic elegance, highlighting the textures and colors of this flavorful dish.

Ingredients:

  • - 1 lb ground lamb
  • - 1/2 cup finely chopped onion
  • - 1/4 cup finely chopped cilantro
  • - 2 cloves garlic, minced
  • - 1 tsp ground cumin
  • - 1/2 tsp ground coriander
  • - 1/4 tsp cayenne pepper (optional)
  • - 1/4 cup breadcrumbs
  • - 1 egg, lightly beaten
  • - Salt and pepper to taste
  • - 1 cup plain Greek yogurt
  • - 1/4 cup chopped fresh mint
  • - 2 tbsp lemon juice
  • - Olive oil for grilling

Instructions:

  1. 1. In a large bowl, gently combine the ground lamb, onion, cilantro, garlic, cumin, coriander, cayenne pepper (if using), breadcrumbs, egg, salt, and pepper. Mix well but avoid overmixing, which can make the koftas tough. Shape the mixture into 1-inch thick cylinders, about 3 inches long.
  2. 2. Heat a grill pan or outdoor grill to medium-high heat. Lightly brush the koftas with olive oil.
  3. 3. Grill the koftas for 4-5 minutes per side, or until cooked through and browned on all sides. Use tongs to carefully turn them to ensure even cooking. Internal temperature should reach 160°F (71°C).
  4. 4. While the koftas are grilling, prepare the mint-yogurt sauce. In a medium bowl, whisk together the Greek yogurt, mint, and lemon juice. Season with salt and pepper to taste.
  5. 5. Once the koftas are cooked, remove them from the grill and let them rest for a few minutes before serving.
  6. 6. Serve the lamb koftas immediately, topped generously with the refreshing mint-yogurt sauce.
  7. 7. For an extra touch, consider serving the koftas with a side of warm pita bread or couscous. The pita bread can be used to scoop up the delicious mint yogurt sauce.
  8. 8. Garnish the plate with extra cilantro sprigs and a lemon wedge for a vibrant presentation.
