Ingredients:
- - 1 lb ground lamb
- - 1/2 cup finely chopped onion
- - 1/4 cup finely chopped cilantro
- - 2 cloves garlic, minced
- - 1 tsp ground cumin
- - 1 tsp ground coriander
- - 1/2 tsp turmeric powder
- - 1/4 tsp cayenne pepper (optional)
- - Salt and pepper to taste
- - 1/4 cup plain yogurt
- - 2 tbsp olive oil
- - 1 large red bell pepper, thinly sliced
- - 1 large green bell pepper, thinly sliced
- - 1 yellow onion, thinly sliced
- - 1 cup cherry tomatoes
- - 1/4 cup chopped fresh mint
Instructions:
- 1. In a large bowl, combine ground lamb, onion, cilantro, garlic, cumin, coriander, turmeric, cayenne pepper (if using), salt, and pepper. Gently mix until well combined. Add the yogurt and mix again until evenly distributed.
- 2. Shape the lamb mixture into 1-inch thick kababs. You should get approximately 8-10 kababs depending on size.
- 3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the kababs and cook for 4-5 minutes per side, or until browned and cooked through. Remove the kababs from the skillet and set aside.
- 4. In the same skillet, add the remaining 1 tablespoon of olive oil. Add the red and green bell peppers and yellow onion and cook for 5-7 minutes, stirring occasionally, until softened but still slightly crisp.
- 5. Add the cherry tomatoes and cook for another 2-3 minutes, until they start to soften and release their juices.
- 6. Return the kababs to the skillet. Add the chopped mint and stir gently to combine. Simmer for 2-3 minutes to allow the flavors to meld.
- 7. Taste and adjust seasoning as needed, adding more salt, pepper, or cayenne if desired.
- 8. Serve the Kabab Paradise immediately, garnished with extra cilantro if desired. The vibrant colors of the peppers and tomatoes create a beautiful contrast against the rich brown of the lamb kababs.
