Ingredients:

  • - 1 tbsp vegetable oil
  • - 1 large onion, finely chopped
  • - 2 cloves garlic, minced
  • - 1 inch ginger, grated
  • - 1 tsp ground cumin
  • - 1 tsp ground coriander
  • - 1/2 tsp turmeric powder
  • - 1/4 tsp cayenne pepper (optional)
  • - 1/2 tsp garam masala
  • - 1/4 tsp ground cloves
  • - 1 (14.5 oz) can diced tomatoes, undrained
  • - 1 cup vegetable broth
  • - 1 cup chickpeas, drained and rinsed
  • - 1 cup frozen peas
  • - 1/2 cup chopped cilantro
  • - Salt and pepper to taste
  • - Cooked basmati rice, for serving

Instructions:

  1. 1. Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. 2. Add the minced garlic and grated ginger and cook for another minute until fragrant.
  3. 3. Stir in the ground cumin, coriander, turmeric, cayenne pepper (if using), garam masala, and ground cloves. Cook for 30 seconds, stirring constantly, until fragrant.
  4. 4. Add the diced tomatoes (undrained) and vegetable broth to the pot. Bring the mixture to a simmer, then reduce heat to low, cover, and simmer for 15 minutes, stirring occasionally.
  5. 5. Stir in the chickpeas and frozen peas. Continue to simmer for another 5 minutes, or until the peas are heated through.
  6. 6. Remove from heat and stir in the chopped cilantro. Season with salt and pepper to taste.
