Ingredients:
- - 1 tbsp vegetable oil
- - 1 large onion, finely chopped
- - 2 cloves garlic, minced
- - 1 inch ginger, grated
- - 1 tsp ground cumin
- - 1 tsp ground coriander
- - 1/2 tsp turmeric powder
- - 1/4 tsp cayenne pepper (optional)
- - 1/2 tsp garam masala
- - 1/4 tsp ground cloves
- - 1 (14.5 oz) can diced tomatoes, undrained
- - 1 cup vegetable broth
- - 1 cup chickpeas, drained and rinsed
- - 1 cup frozen peas
- - 1/2 cup chopped cilantro
- - Salt and pepper to taste
- - Cooked basmati rice, for serving
Instructions:
- 1. Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- 2. Add the minced garlic and grated ginger and cook for another minute until fragrant.
- 3. Stir in the ground cumin, coriander, turmeric, cayenne pepper (if using), garam masala, and ground cloves. Cook for 30 seconds, stirring constantly, until fragrant.
- 4. Add the diced tomatoes (undrained) and vegetable broth to the pot. Bring the mixture to a simmer, then reduce heat to low, cover, and simmer for 15 minutes, stirring occasionally.
- 5. Stir in the chickpeas and frozen peas. Continue to simmer for another 5 minutes, or until the peas are heated through.
- 6. Remove from heat and stir in the chopped cilantro. Season with salt and pepper to taste.
