
Fried Rice with Ginger and Scallions Recipe

Ingredients:
- - 2 cups cooked rice (day-old is best)
- - 2 tablespoons vegetable oil
- - 2 cloves garlic, minced
- - 1 inch ginger, minced
- - 4 scallions, thinly sliced (separate white and green parts)
- - 1 cup shredded carrots
- - 1/2 cup frozen peas
- - 1/4 cup soy sauce
- - 2 tablespoons oyster sauce (optional)
- - 1 tablespoon sesame oil
- - 1 teaspoon rice wine vinegar
- - Salt and pepper to taste
- - 1/4 cup chopped roasted peanuts (optional, for garnish)
Instructions:
- 1. Heat vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and ginger and stir-fry for 30 seconds, until fragrant. Be careful not to burn the garlic and ginger.
- 2. Add the white parts of the scallions and stir-fry for another minute, until slightly softened.
- 3. Add the shredded carrots and stir-fry for 2-3 minutes, until they are slightly tender-crisp.
- 4. Add the frozen peas and stir-fry for 1-2 minutes, until heated through.
- 5. Add the cooked rice to the wok or skillet. Break up any clumps of rice with a spatula or spoon. Stir-fry for 3-4 minutes, until the rice is heated through and slightly crispy.
- 6. In a small bowl, whisk together the soy sauce, oyster sauce (if using), sesame oil, and rice wine vinegar.
- 7. Pour the sauce over the rice and stir-fry for another minute, until the rice is evenly coated and the sauce has thickened slightly. Season with salt and pepper to taste.
