
Eid Special Sweet Vermicelli Recipe

Ingredients:
- - 1 cup fine vermicelli pasta
- - 1/2 cup sugar
- - 1/4 cup ghee (clarified butter)
- - 1/4 cup milk
- - 1/4 cup chopped pistachios
- - 1/4 cup chopped almonds
- - 1/4 cup raisins
- - 1 teaspoon cardamom powder
- - 1/2 teaspoon saffron strands, soaked in 2 tablespoons warm milk for 10 minutes
- - 1/4 cup rose water
- - Pinch of salt
Instructions:
- 1. Heat the ghee in a large non-stick pan over medium heat. Add the vermicelli and sauté for 5-7 minutes, stirring frequently, until lightly golden brown. Be careful not to burn it.
- 2. Add the sugar and stir well, ensuring the sugar coats the vermicelli evenly. Continue to cook for another 2-3 minutes, until the sugar starts to caramelize slightly.
- 3. Pour in the milk and stir continuously to prevent sticking. Cook for 2-3 minutes until the milk is absorbed and the vermicelli is soft but not mushy.
- 4. Stir in the cardamom powder, saffron milk (including the soaked saffron strands), rose water, and salt. Mix well to combine all the flavors.
- 5. Reduce the heat to low and simmer for 5 minutes, stirring occasionally, to allow the flavors to meld.
- 6. Add the chopped pistachios, almonds, and raisins. Stir gently to incorporate them into the vermicelli. Cook for another 2-3 minutes.
- 7. Remove from the heat and let the vermicelli cool slightly. The vermicelli will continue to soften as it cools.
- 8. Serve warm or at room temperature. Garnish with extra chopped nuts and saffron strands, if desired.
