Ingredients:

  • - 1 cup vermicelli pasta (thin)
  • - 1 cup milk (full-fat)
  • - 1 cup water
  • - 1/2 cup sugar
  • - 1/4 cup chopped dates (pitted)
  • - 1/4 cup chopped pistachios
  • - 1/4 cup chopped almonds
  • - 1/4 cup raisins
  • - 2 tablespoons ghee (clarified butter)
  • - 1 teaspoon cardamom powder
  • - A pinch of saffron strands (soaked in 1 tablespoon warm milk for 10 minutes)

Instructions:

  1. 1. Heat the ghee in a heavy-bottomed pan over medium heat. Add the vermicelli pasta and sauté for 2-3 minutes until lightly golden brown, stirring constantly to prevent burning.
  2. 2. Add the milk and water to the pan. Bring the mixture to a boil, then reduce the heat to low. Simmer for 10-12 minutes, or until the vermicelli is cooked through and the liquid has reduced slightly, stirring occasionally to prevent sticking.
  3. 3. Stir in the sugar, chopped dates, pistachios, almonds, and raisins. Continue to simmer for another 5 minutes, allowing the flavors to meld.
  4. 4. Add the cardamom powder and the saffron milk (including the saffron strands). Stir well and cook for 2 more minutes.
  5. 5. Remove the pan from the heat and allow the Sheer Khurma to cool slightly. The vermicelli will continue to absorb the liquid as it cools.
  6. 6. Once cooled slightly, transfer the Sheer Khurma to a serving bowl. You should notice a creamy, rich consistency has developed.
  7. 7. Garnish with extra chopped pistachios and almonds for visual appeal. The nuts will provide pops of color and texture.
