
Eid Special Sheer Khurma Recipe

Ingredients:
- - 1 cup vermicelli pasta (thin)
- - 1 cup milk (full-fat)
- - 1 cup water
- - 1/2 cup sugar
- - 1/4 cup chopped dates (pitted)
- - 1/4 cup chopped pistachios
- - 1/4 cup chopped almonds
- - 1/4 cup raisins
- - 2 tablespoons ghee (clarified butter)
- - 1 teaspoon cardamom powder
- - A pinch of saffron strands (soaked in 1 tablespoon warm milk for 10 minutes)
Instructions:
- 1. Heat the ghee in a heavy-bottomed pan over medium heat. Add the vermicelli pasta and sauté for 2-3 minutes until lightly golden brown, stirring constantly to prevent burning.
- 2. Add the milk and water to the pan. Bring the mixture to a boil, then reduce the heat to low. Simmer for 10-12 minutes, or until the vermicelli is cooked through and the liquid has reduced slightly, stirring occasionally to prevent sticking.
- 3. Stir in the sugar, chopped dates, pistachios, almonds, and raisins. Continue to simmer for another 5 minutes, allowing the flavors to meld.
- 4. Add the cardamom powder and the saffron milk (including the saffron strands). Stir well and cook for 2 more minutes.
- 5. Remove the pan from the heat and allow the Sheer Khurma to cool slightly. The vermicelli will continue to absorb the liquid as it cools.
- 6. Once cooled slightly, transfer the Sheer Khurma to a serving bowl. You should notice a creamy, rich consistency has developed.
- 7. Garnish with extra chopped pistachios and almonds for visual appeal. The nuts will provide pops of color and texture.
- 8. Serve warm or cold. Sheer Khurma can be enjoyed at room temperature or chilled in the refrigerator for a refreshing dessert.
