Chilly Garlic Shrimp Scampi with Spinach Recipe

Description:

A vibrant and flavorful dish! The skillet is filled with a glistening, light green spinach base, speckled with bright red pepper flakes. Plump, pink shrimp are nestled amongst the spinach, glistening with the white wine and lemon juice sauce. The sauce itself is a creamy, slightly oily emulsion, coating each shrimp and strand of pasta. The bright green of the spinach contrasts beautifully with the deep red of the pepper flakes, and the overall colour scheme is light and fresh. The aroma is rich with garlic, butter, white wine, and a subtle hint of chilli, promising a zesty yet comforting flavour profile. A scattering of fresh parsley adds a pop of bright green and further texture to the already appealing presentation. The dish is served steaming hot, the linguine glistening slightly underneath the sauce, ready to be enjoyed immediately.

Ingredients:

  • - 1 pound large shrimp, peeled and deveined
  • - 4 cloves garlic, minced
  • - 1/2 cup dry white wine
  • - 1/4 cup olive oil
  • - 1/4 cup butter
  • - 1/4 cup chopped fresh parsley
  • - 1/4 teaspoon red pepper flakes (or more, to taste)
  • - Salt and freshly ground black pepper to taste
  • - 5 ounces fresh spinach, roughly chopped
  • - 1/4 cup lemon juice
  • - 1 tablespoon grated Parmesan cheese (optional)
  • - Cooked linguine or spaghetti, for serving

Instructions:

  1. 1. Pat the shrimp dry with paper towels. Season generously with salt and pepper.
  2. 2. In a large skillet, melt the butter with olive oil over medium heat. Add the minced garlic and red pepper flakes and cook for about 1 minute, or until fragrant, stirring constantly to prevent burning.
  3. 3. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove the shrimp from the skillet and set aside.
  4. 4. Pour in the white wine and lemon juice into the skillet and bring to a simmer, scraping up any browned bits from the bottom. Simmer for 2-3 minutes, or until the liquid is slightly reduced.
  5. 5. Add the chopped spinach to the skillet and cook for 1-2 minutes, or until wilted.
  6. 6. Return the shrimp to the skillet and stir to combine with the spinach and sauce.
  7. 7. Stir in the chopped parsley and grated Parmesan cheese (if using). Season with additional salt and pepper to taste.
  8. 8. Serve the Chilly Garlic Shrimp Scampi immediately over cooked linguine or spaghetti.
