Chilly Garlic Shrimp Scampi with Zucchini Noodles Recipe
Description:
A vibrant dish of bright orange-pink shrimp nestled amongst pale green zucchini noodles, all glistening with a creamy, slightly spicy white wine sauce. Flecks of bright green parsley and the optional dusting of white Parmesan cheese add further visual appeal. The sauce clings beautifully to both the shrimp and the zucchini, creating a rich and textured culinary experience. The red pepper flakes provide small pops of color amongst the otherwise pale hues, hinting at the subtle heat of the dish. The overall appearance is one of light freshness, balanced by the richness of the sauce and shrimp.
Ingredients:
- - 1 pound large shrimp, peeled and deveined
- - 2 tablespoons olive oil
- - 4 cloves garlic, minced
- - 1/2 teaspoon red pepper flakes (or more, to taste)
- - 1/4 cup dry white wine
- - 1/4 cup lemon juice
- - 2 tablespoons butter
- - 1/4 cup chopped fresh parsley
- - Salt and freshly ground black pepper to taste
- - 2 medium zucchini, spiralized into noodles
- - 1/4 cup grated Parmesan cheese (optional)
Instructions:
- 1. Pat the shrimp dry with paper towels. Season generously with salt and pepper.
- 2. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove the shrimp from the skillet and set aside.
- 3. Add the minced garlic and red pepper flakes to the skillet and cook for 30 seconds, or until fragrant. Be careful not to burn the garlic.
- 4. Pour in the white wine and lemon juice and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Let it reduce slightly, about 1 minute.
- 5. Stir in the butter until melted and the sauce is slightly thickened.
- 6. Return the shrimp to the skillet and toss to coat in the sauce.
- 7. Add the zucchini noodles to the skillet and cook for 2-3 minutes, or until tender-crisp. Stir gently to ensure they are evenly coated in the sauce. Do not overcook.
- 8. Stir in the chopped parsley and Parmesan cheese (if using). Season with additional salt and pepper to taste.
