A vibrant and flavorful dish, Chilly Garlic Shrimp Scampi with Angel Hair Pasta is a visual delight. The bright orange-pink of the perfectly cooked shrimp contrasts beautifully against the snowy white of the angel hair pasta. The glistening scampi sauce, speckled with bright green parsley and flecks of red pepper, clings lovingly to each strand of pasta. A generous sprinkle of Parmesan cheese adds a creamy white texture, while the vibrant green parsley and occasional red pepper flakes add pops of color that are both visually appealing and hint at the dish's spicy kick. The overall effect is one of warmth and inviting deliciousness, promising a taste as exciting as its appearance.

Ingredients:

  • - 1 pound large shrimp, peeled and deveined
  • - 4 tablespoons butter
  • - 4 cloves garlic, minced
  • - 1/2 cup dry white wine
  • - 1/4 cup lemon juice
  • - 1/4 teaspoon red pepper flakes (or more, to taste)
  • - 1/4 cup chopped fresh parsley
  • - Salt and freshly ground black pepper to taste
  • - 8 ounces angel hair pasta
  • - 1/4 cup grated Parmesan cheese

Instructions:

  1. 1. Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to package directions, until al dente. Reserve 1/2 cup of pasta cooking water before draining.
  2. 2. While the pasta is cooking, melt the butter in a large skillet over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant, being careful not to burn the garlic.
  3. 3. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through.
  4. 4. Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 1-2 minutes, allowing the sauce to slightly reduce.
  5. 5. Stir in the red pepper flakes, parsley, salt, and pepper. Taste and adjust seasonings as needed. If the sauce is too thick, add a tablespoon or two of the reserved pasta water until you reach your desired consistency.
  6. 6. Add the cooked angel hair pasta to the skillet and toss to coat with the scampi sauce.
  7. 7. Serve immediately, garnished with grated Parmesan cheese.
  8. 8. For an extra touch, garnish with a sprinkle of extra red pepper flakes and a lemon wedge.
