Chilly Garlic Shrimp Scampi Recipe

Description:

A vibrant dish of plump, pink shrimp nestled in a creamy, garlicky sauce coats perfectly cooked linguine. The sauce is a pale yellow-white, punctuated by flecks of bright green parsley and the occasional red chili flake, giving a subtle hint of the dish's heat. The shrimp are glistening from the butter, and the pasta is glistening with the creamy sauce. The overall effect is warm, inviting, and delicious. The aroma is rich with garlic, butter, and a gentle hint of white wine and lemon.

Ingredients:

  • - 1 pound large shrimp, peeled and deveined
  • - 4 tablespoons butter
  • - 4 cloves garlic, minced
  • - 1/2 teaspoon red pepper flakes
  • - 1/4 cup dry white wine
  • - 1/4 cup lemon juice
  • - 1/4 cup chopped fresh parsley
  • - Salt and pepper to taste
  • - 1/2 pound linguine pasta
  • - 1/4 cup grated Parmesan cheese

Instructions:

  1. 1. Cook linguine according to package directions. Reserve 1/2 cup of pasta water before draining.
  2. 2. While pasta cooks, melt butter in a large skillet over medium heat. Add minced garlic and red pepper flakes; cook for 1 minute, or until fragrant, stirring constantly to prevent burning.
  3. 3. Add shrimp to the skillet and cook for 2-3 minutes per side, or until pink and opaque.
  4. 4. Pour in white wine and lemon juice; bring to a simmer and cook for 1 minute, allowing the sauce to slightly reduce.
  5. 5. Stir in chopped parsley, salt, and pepper.
  6. 6. Add cooked linguine to the skillet and toss to coat with the sauce. If the sauce is too thick, add a little of the reserved pasta water until desired consistency is reached.
  7. 7. Remove from heat and stir in Parmesan cheese.
  8. 8. Serve immediately, garnished with extra parsley and a sprinkle of red pepper flakes if desired.
