Ingredients:

  • - 1 pound linguine pasta
  • - 1/4 cup vegetable oil
  • - 6 cloves garlic, minced
  • - 2-3 Thai chilies, finely chopped (adjust to your spice preference)
  • - 1/2 cup soy sauce
  • - 1/4 cup oyster sauce
  • - 2 tablespoons rice vinegar
  • - 1 tablespoon brown sugar
  • - 1 teaspoon sesame oil
  • - 1/2 cup chopped scallions
  • - 1/4 cup chopped cilantro
  • - 1/4 cup toasted sesame seeds (optional)

Instructions:

  1. 1. Cook linguine according to package directions. Drain and set aside. Reserve about 1/2 cup of the pasta water.
  2. 2. While the pasta cooks, heat the vegetable oil in a large wok or skillet over medium heat. Add the minced garlic and Thai chilies and sauté for 1-2 minutes, until fragrant but not browned. Be careful not to burn the garlic.
  3. 3. In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, brown sugar, and sesame oil.
  4. 4. Pour the sauce into the wok and bring to a simmer. Cook for 1-2 minutes, allowing the sauce to thicken slightly.
  5. 5. Add the cooked linguine to the wok and toss to coat evenly with the sauce. If the sauce is too thick, add a little of the reserved pasta water, a tablespoon at a time, until you reach your desired consistency.
  6. 6. Continue to cook for 2-3 minutes, allowing the noodles to absorb the flavors.
  7. 7. Remove from heat and stir in the chopped scallions and cilantro.
  8. 8. Serve immediately, garnished with toasted sesame seeds (optional).
