
Chilly Garlic Noodles Recipe

Ingredients:
- - 1 pound linguine pasta
- - 1/4 cup vegetable oil
- - 6 cloves garlic, minced
- - 2-3 Thai chilies, finely chopped (adjust to your spice preference)
- - 1/2 cup soy sauce
- - 1/4 cup oyster sauce
- - 2 tablespoons rice vinegar
- - 1 tablespoon brown sugar
- - 1 teaspoon sesame oil
- - 1/2 cup chopped scallions
- - 1/4 cup chopped cilantro
- - 1/4 cup toasted sesame seeds (optional)
Instructions:
- 1. Cook linguine according to package directions. Drain and set aside. Reserve about 1/2 cup of the pasta water.
- 2. While the pasta cooks, heat the vegetable oil in a large wok or skillet over medium heat. Add the minced garlic and Thai chilies and sauté for 1-2 minutes, until fragrant but not browned. Be careful not to burn the garlic.
- 3. In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, brown sugar, and sesame oil.
- 4. Pour the sauce into the wok and bring to a simmer. Cook for 1-2 minutes, allowing the sauce to thicken slightly.
- 5. Add the cooked linguine to the wok and toss to coat evenly with the sauce. If the sauce is too thick, add a little of the reserved pasta water, a tablespoon at a time, until you reach your desired consistency.
- 6. Continue to cook for 2-3 minutes, allowing the noodles to absorb the flavors.
- 7. Remove from heat and stir in the chopped scallions and cilantro.
- 8. Serve immediately, garnished with toasted sesame seeds (optional).
