Ingredients:

  • - 1 pound spaghetti
  • - 1/4 cup vegetable oil
  • - 6 cloves garlic, minced
  • - 2-3 red chilies, finely chopped (adjust to your spice preference)
  • - 1/2 cup soy sauce
  • - 1/4 cup oyster sauce
  • - 2 tablespoons rice vinegar
  • - 1 tablespoon sesame oil
  • - 1 tablespoon brown sugar
  • - 1 teaspoon grated ginger
  • - 1/2 cup chopped scallions
  • - 1/4 cup chopped cilantro
  • - Optional: 1/4 cup roasted peanuts, crushed

Instructions:

  1. 1. Cook spaghetti according to package directions until al dente. Drain and set aside. Reserve about 1/2 cup of pasta water.
  2. 2. While the pasta cooks, heat vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and chopped chilies. Stir-fry for about 30 seconds, until fragrant, being careful not to burn the garlic.
  3. 3. Add soy sauce, oyster sauce, rice vinegar, sesame oil, brown sugar, and grated ginger to the wok. Stir well to combine and bring to a simmer.
  4. 4. Reduce heat to medium-low and let the sauce simmer for about 2-3 minutes, allowing the flavors to meld.
  5. 5. Add the cooked spaghetti to the wok and toss to coat evenly with the sauce. If the sauce is too thick, add a little of the reserved pasta water, a tablespoon at a time, until you reach your desired consistency.
  6. 6. Continue to toss the noodles for another 2-3 minutes, ensuring every strand is coated.
  7. 7. Stir in the chopped scallions and cilantro. Toss gently to combine.
