Ingredients:

  • - 1 cup basmati rice
  • - 4 cups chicken broth
  • - 1/2 cup dry white wine
  • - 1/4 cup finely chopped onion
  • - 2 cloves garlic, minced
  • - 1/2 teaspoon ground saffron
  • - 1/4 teaspoon turmeric powder
  • - 1/4 teaspoon ground cinnamon
  • - 1/4 teaspoon ground cardamom
  • - 1/4 cup chopped cilantro
  • - 1/4 cup chopped fresh mint
  • - 2 tablespoons ghee (clarified butter)
  • - 1/2 cup cooked chicken, shredded
  • - 1/4 cup toasted slivered almonds
  • - Salt and pepper to taste

Instructions:

  1. 1. Heat ghee in a large pan over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. 2. Stir in saffron, turmeric, cinnamon, and cardamom. Cook for 30 seconds, stirring constantly, until fragrant.
  3. 3. Add basmati rice and toast for 2 minutes, stirring frequently, until lightly golden.
  4. 4. Pour in white wine and cook until absorbed, about 2 minutes.
  5. 5. Add 1 cup of hot chicken broth and bring to a simmer. Reduce heat to low, cover, and cook for 10 minutes, stirring occasionally.
  6. 6. Continue adding the remaining chicken broth, 1 cup at a time, allowing each addition to be absorbed before adding more. Continue cooking until the rice is tender but still slightly firm to the bite, about 20-25 minutes total. Stir gently throughout the process to prevent sticking.
  7. 7. Stir in shredded chicken, cilantro, and mint. Season with salt and pepper to taste.
  8. 8. Garnish with toasted slivered almonds and serve immediately.
