Ingredients:

- - 4 cups chicken broth

- - 1/4 teaspoon ground cinnamon
- - 1/4 teaspoon ground cardamom
- - 1/4 cup chopped cilantro
- - 1/4 cup chopped fresh mint
- - 2 tablespoons ghee (clarified butter)
- - 1/2 cup cooked chicken, shredded
- - 1/4 cup toasted slivered almonds
- - Salt and pepper to taste
Instructions:
- 1. Heat ghee in a large pan over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- 2. Stir in saffron, turmeric, cinnamon, and cardamom. Cook for 30 seconds, stirring constantly, until fragrant.
- 3. Add basmati rice and toast for 2 minutes, stirring frequently, until lightly golden.
- 4. Pour in white wine and cook until absorbed, about 2 minutes.
- 5. Add 1 cup of hot chicken broth and bring to a simmer. Reduce heat to low, cover, and cook for 10 minutes, stirring occasionally.
- 6. Continue adding the remaining chicken broth, 1 cup at a time, allowing each addition to be absorbed before adding more. Continue cooking until the rice is tender but still slightly firm to the bite, about 20-25 minutes total. Stir gently throughout the process to prevent sticking.
- 7. Stir in shredded chicken, cilantro, and mint. Season with salt and pepper to taste.
