Ingredients:

  • - 1 lb beef sirloin steak, cut into 1-inch cubes
  • - 1/2 cup soy sauce
  • - 1/4 cup mirin (sweet rice wine)
  • - 1/4 cup sake (optional)
  • - 2 tablespoons brown sugar
  • - 2 tablespoons cornstarch
  • - 1 tablespoon grated ginger
  • - 2 cloves garlic, minced
  • - 1 red bell pepper, cut into 1-inch pieces
  • - 1 yellow bell pepper, cut into 1-inch pieces
  • - 1 zucchini, cut into 1-inch pieces
  • - 1 cup broccoli florets
  • - 2 tablespoons sesame oil
  • - 1 tablespoon sesame seeds

Instructions:

  1. 1. In a medium bowl, whisk together soy sauce, mirin, sake (if using), brown sugar, cornstarch, ginger, and garlic. Set aside.
  2. 2. Heat sesame oil in a large skillet or wok over medium-high heat. Add beef cubes and cook until browned on all sides, about 5-7 minutes. Remove beef from skillet and set aside.
  3. 3. Add bell peppers and zucchini to the skillet and cook for 3-4 minutes, until slightly softened. Add broccoli and cook for another 2-3 minutes, until tender-crisp.
  4. 4. Return the beef to the skillet. Pour the teriyaki sauce over the beef and vegetables. Bring to a simmer, stirring constantly, until the sauce thickens and coats the beef and vegetables, about 2-3 minutes.
  5. 5. Reduce heat to low and simmer for another 5 minutes, allowing the flavors to meld. Stir occasionally to prevent sticking.
  6. 6. Remove from heat and stir in sesame seeds.
  7. 7. Serve immediately over rice or noodles. Garnish with extra sesame seeds or chopped green onions, if desired.
