Ingredients:
- - 1 pound ground beef
- - 1 small onion, finely chopped
- - 2 cloves garlic, minced
- - 1 tablespoon chili powder
- - 1 teaspoon cumin
- - 1 teaspoon paprika
- - 1/2 teaspoon salt
- - 1/4 teaspoon black pepper
- - 1 can (15 ounces) black beans, drained and rinsed (optional)
- - 8 small corn or flour tortillas
- - 1 cup shredded lettuce
- - 1 cup diced tomatoes
- - 1 cup shredded cheese (cheddar or Mexican blend)
- - 1/2 cup sour cream
- - 1/4 cup fresh cilantro, chopped (optional)
- - Lime wedges for serving
Instructions:
- 1. In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula, approximately 5-7 minutes.
- 2. Add the chopped onion and minced garlic to the skillet, cooking for an additional 3-4 minutes until the onion is soft and translucent.
- 3. Stir in the chili powder, cumin, paprika, salt, and black pepper. If using, add the black beans and mix well. Cook for another 2-3 minutes to allow the spices to meld together and the beans to heat up.
- 4. While the beef mixture is cooking, warm the tortillas in a separate skillet over medium heat for about 30 seconds on each side until pliable.
- 5. Assemble the tacos by placing a generous spoonful of the beef mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, and shredded cheese.
- 6. Finish with a dollop of sour cream, a sprinkle of cilantro if desired, and serve with lime wedges on the side.
