Ingredients:

  • - 1 block (14 oz) extra-firm tofu, pressed and cubed
  • - 1 tbsp olive oil
  • - 1 red bell pepper, thinly sliced
  • - 1 green bell pepper, thinly sliced
  • - 1 cup broccoli florets
  • - 1/2 cup sliced carrots
  • - 1/2 cup snow peas
  • - 1/4 cup soy sauce
  • - 2 tbsp mirin
  • - 2 tbsp brown sugar
  • - 1 tbsp cornstarch
  • - 1 tbsp water
  • - 1 tsp grated ginger
  • - 1 clove garlic, minced
  • - 1 green onion, thinly sliced (for garnish)
  • - Sesame seeds (for garnish)

Instructions:

  1. 1. Prepare the tofu: Press the tofu to remove excess water. Cut into 1-inch cubes. Pat dry with paper towels. This ensures a crispy exterior.
  2. 2. Make the teriyaki glaze: In a small bowl, whisk together soy sauce, mirin, brown sugar, cornstarch, water, ginger, and minced garlic. Set aside.
  3. 3. Stir-fry the vegetables: Heat olive oil in a large wok or skillet over medium-high heat. Add the bell peppers and broccoli and stir-fry for 3-4 minutes, until slightly softened. Add the carrots and snow peas and continue to stir-fry for another 2-3 minutes.
  4. 4. Add the tofu: Add the pressed tofu cubes to the wok and stir-fry for 5-7 minutes, until lightly browned on all sides.
