Ingredients:

  • - 1 lb ground lamb
  • - 1/2 cup finely chopped onion
  • - 1/4 cup finely chopped cilantro
  • - 2 cloves garlic, minced
  • - 1 tsp ground cumin
  • - 1 tsp ground coriander
  • - 1/2 tsp turmeric powder
  • - 1/4 tsp cayenne pepper (optional)
  • - Salt and pepper to taste
  • - 1 tbsp olive oil
  • - 1 large red bell pepper, seeded and diced
  • - 1 large green bell pepper, seeded and diced
  • - 1/2 cup pineapple chunks
  • - 1/4 cup mango chutney
  • - 1/4 cup chopped fresh mint

Instructions:

  1. 1. In a large bowl, combine ground lamb, onion, cilantro, garlic, cumin, coriander, turmeric, cayenne pepper (if using), salt, and pepper. Gently mix with your hands until well combined. Form the mixture into 12 small patties, about 3 inches in diameter and 1/2 inch thick.
  2. 2. Heat olive oil in a large skillet over medium-high heat. Add the lamb patties and cook for 4-5 minutes per side, or until browned and cooked through. Remove from skillet and set aside.
  3. 3. Add diced bell peppers to the skillet and cook for 5-7 minutes, stirring occasionally, until softened.
  4. 4. Stir in pineapple chunks and mango chutney. Cook for another 2-3 minutes, until heated through and slightly caramelized.
  5. 5. Reduce heat to low. Return the cooked lamb patties to the skillet. Add chopped fresh mint. Gently stir to combine all ingredients.
  6. 6. Simmer for 2-3 minutes, allowing the flavors to meld. Ensure the kababs are heated through.
