Ingredients:

  • - 1 lb ground lamb
  • - 1/2 cup finely chopped onion
  • - 1/4 cup finely chopped cilantro
  • - 2 cloves garlic, minced
  • - 1 tsp ground cumin
  • - 1/2 tsp ground coriander
  • - 1/4 tsp cayenne pepper (or more, to taste)
  • - 1/4 tsp salt
  • - 1/4 tsp black pepper
  • - 1 tbsp olive oil
  • - 1 large bell pepper (any color), cut into 1-inch pieces
  • - 1 cup cherry tomatoes, halved
  • - 1/2 cup crumbled feta cheese
  • - 1/4 cup chopped fresh mint
  • - 1/4 cup lemon juice
  • - 2 tbsp olive oil

Instructions:

  1. 1. In a large bowl, gently combine the ground lamb, onion, cilantro, garlic, cumin, coriander, cayenne pepper, salt, and pepper. Mix well, being careful not to overwork the meat. Shape the mixture into 8 small patties, about 3/4 inch thick.
  2. 2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the lamb patties and cook for 3-4 minutes per side, or until browned and cooked through. Remove the kababs from the skillet and set aside.
  3. 3. Add the bell pepper pieces to the skillet and cook for 3-4 minutes, or until slightly softened. Add the cherry tomatoes and cook for another 2 minutes.
  4. 4. In a small bowl, whisk together the feta cheese, mint, lemon juice, and 2 tbsp olive oil.
  5. 5. Return the cooked kababs to the skillet with the bell peppers and tomatoes. Pour the feta mixture over the kababs and vegetables.
  6. 6. Cook for 2-3 minutes, or until the feta cheese is melted and slightly browned, and the sauce has thickened slightly. Stir gently to coat the kababs evenly.
  7. 7. Remove from heat and garnish with extra fresh mint, if desired.
  8. 8. Serve immediately, accompanied by warm pita bread or couscous for a complete meal.
