Ingredients:
- - 1 lb ground beef
- - 1 tbsp olive oil

- - 1 (15 ounce) can black beans, rinsed and drained
- - 1 (15 ounce) can corn, drained
- - 1 packet taco seasoning
- - 1/2 cup water
- - 12 corn tortillas
- - 1 cup shredded cheddar cheese
- - 1/2 cup shredded purple cabbage
- - 1/4 cup chopped cilantro
- - 1 avocado, diced
- - Sour cream or Greek yogurt, for garnish (optional)
Instructions:
- 1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain off any excess grease.
- 2. Add the chopped onion to the skillet and cook until softened, about 3-5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
