Fish Veracruz with a Twist - Recipe

Description:

A vibrant and flavorful dish, Fish Veracruz with a Twist is a feast for the eyes as well as the palate. The rich red and green of the peppers contrast beautifully with the snowy white of the flaky fish. The sauce is a deep, glistening crimson, speckled with flecks of green cilantro and punctuated by the creamy green of the avocado. The aromas of oregano, cumin, and lime fill the air, promising a taste of sunshine and the Mexican coast. The fish is tender and moist, perfectly cooked to retain its natural juices. The sauce clings to the fish, creating a symphony of textures and tastes in every bite. The avocado adds a creamy counterpoint to the rich tomato-based sauce, a textural element that elevates the dish.

Ingredients:

  • - 1 lb firm white fish fillets (cod, snapper, or halibut), cut into 1-inch pieces
  • - 1 large onion, chopped
  • - 2 cloves garlic, minced
  • - 1 red bell pepper, chopped
  • - 1 green bell pepper, chopped
  • - 1 (14.5 ounce) can diced tomatoes, undrained
  • - 1/2 cup vegetable broth
  • - 1/4 cup olive oil
  • - 2 tablespoons lime juice
  • - 1 tablespoon dried oregano
  • - 1 teaspoon cumin
  • - 1/2 teaspoon cayenne pepper (optional)
  • - Salt and pepper to taste
  • - 1/4 cup chopped cilantro, for garnish
  • - 2 ripe avocados, diced, for garnish

Instructions:

  1. 1. Heat olive oil in a large skillet over medium-high heat. Add onion and bell peppers and cook for 5-7 minutes, until softened. Add garlic and cook for 1 minute more, until fragrant.
  2. 2. Stir in diced tomatoes (undrained), vegetable broth, lime juice, oregano, cumin, and cayenne pepper (if using). Bring to a simmer. Season with salt and pepper to taste.
  3. 3. Reduce heat to medium-low, and gently simmer the sauce for 10-15 minutes, allowing the flavors to meld. The sauce should thicken slightly.
  4. 4. Add the fish fillets to the skillet. Cook for 4-6 minutes per side, or until the fish is cooked through and flakes easily with a fork. Do not overcook.
  5. 5. Remove the skillet from the heat.
  6. 6. Carefully transfer the fish and sauce to a serving dish.
  7. 7. Garnish generously with chopped cilantro and diced avocado.
  8. 8. Serve immediately with warm tortillas or rice. A squeeze of extra lime juice before serving enhances the brightness of the dish.
