Ingredients:

  • - 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • - 1 tbsp olive oil
  • - 1 large onion, chopped
  • - 2 cloves garlic, minced
  • - 1 red bell pepper, chopped
  • - 1 green bell pepper, chopped
  • - 1 (14.5 oz) can diced tomatoes, undrained
  • - 1 (10 oz) can diced tomatoes and green chilies (Rotel), undrained
  • - 1 cup chicken broth
  • - 1/2 cup heavy cream
  • - 1/4 cup chopped fresh cilantro
  • - 2 tbsp lime juice
  • - 1 tsp ground cumin
  • - 1 tsp chili powder
  • - 1/2 tsp smoked paprika
  • - 1/4 tsp cayenne pepper (optional)
  • - Salt and pepper to taste
  • - Cooked white rice, for serving

Instructions:

  1. 1. Season chicken cubes generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook, stirring occasionally, until browned on all sides (about 6-8 minutes). Remove chicken from skillet and set aside.
  2. 2. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and bell peppers and cook for another 3-4 minutes, until slightly tender-crisp.
  3. 3. Stir in diced tomatoes (both cans), chicken broth, cumin, chili powder, smoked paprika, and cayenne pepper (if using). Bring to a simmer.
  4. 4. Return chicken to the skillet. Reduce heat to low, cover, and simmer for 15-20 minutes, or until chicken is cooked through and tender.
  5. 5. Stir in heavy cream and cilantro. Simmer for another 2-3 minutes, to allow the sauce to thicken slightly. Stir in lime juice.

  8. 8. Serve hot over cooked white rice. Garnish with extra cilantro, if desired.
