
Breakfast Burrito Fiesta

Ingredients:
- - 1 tablespoon olive oil
- - 1/2 medium onion, chopped
- - 1 bell pepper (any color), chopped
- - 1 cup chorizo sausage, removed from casing
- - 1 (15 ounce) can black beans, rinsed and drained
- - 1 (15 ounce) can corn, drained
- - 1 teaspoon chili powder
- - 1/2 teaspoon cumin
- - 1/4 teaspoon cayenne pepper (optional)
- - Salt and pepper to taste
- - 6 large flour tortillas
- - 2 cups scrambled eggs
- - 1 cup shredded cheddar cheese
- - 1/2 cup salsa
- - Sour cream or Greek yogurt, for serving
- - Avocado, sliced, for serving
Instructions:
- 1. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook for 5-7 minutes, until softened.
- 2. Add the chorizo sausage to the skillet and cook for 8-10 minutes, breaking it up with a spoon, until browned.
- 3. Stir in the black beans, corn, chili powder, cumin, cayenne pepper (if using), salt, and pepper. Cook for 5 minutes, stirring occasionally, to heat through and blend the flavors.
- 4. In a separate skillet, scramble the eggs until cooked through. Season with salt and pepper to taste.
- 5. Warm the tortillas according to package directions. You can heat them in a dry skillet over medium-low heat for about 30 seconds per side, or microwave them wrapped in a damp paper towel for 30-60 seconds.
- 6. To assemble the burritos, lay out a tortilla. Add 1/3 cup of the chorizo and bean mixture, 1/3 cup of the scrambled eggs, and 1/6 of the shredded cheese.
- 7. Fold in the sides of the tortilla, then fold the bottom up and over the filling, and finally roll it up tightly.
- 8. Repeat with the remaining tortillas and fillings.
- 9. Serve immediately with salsa, sour cream or Greek yogurt, and sliced avocado.
