Ingredients:

  • - 1 tablespoon olive oil
  • - 1/2 medium onion, chopped
  • - 1 bell pepper (any color), chopped
  • - 1 cup chorizo sausage, removed from casing
  • - 1 (15 ounce) can black beans, rinsed and drained
  • - 1 (15 ounce) can corn, drained
  • - 1 teaspoon chili powder
  • - 1/2 teaspoon cumin
  • - 1/4 teaspoon cayenne pepper (optional)
  • - Salt and pepper to taste
  • - 6 large flour tortillas
  • - 2 cups scrambled eggs
  • - 1 cup shredded cheddar cheese
  • - 1/2 cup salsa
  • - Sour cream or Greek yogurt, for serving
  • - Avocado, sliced, for serving

Instructions:

  1. 1. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook for 5-7 minutes, until softened.
  2. 2. Add the chorizo sausage to the skillet and cook for 8-10 minutes, breaking it up with a spoon, until browned.
  3. 3. Stir in the black beans, corn, chili powder, cumin, cayenne pepper (if using), salt, and pepper. Cook for 5 minutes, stirring occasionally, to heat through and blend the flavors.
  4. 4. In a separate skillet, scramble the eggs until cooked through. Season with salt and pepper to taste.
  5. 5. Warm the tortillas according to package directions. You can heat them in a dry skillet over medium-low heat for about 30 seconds per side, or microwave them wrapped in a damp paper towel for 30-60 seconds.
  6. 6. To assemble the burritos, lay out a tortilla. Add 1/3 cup of the chorizo and bean mixture, 1/3 cup of the scrambled eggs, and 1/6 of the shredded cheese.
  7. 7. Fold in the sides of the tortilla, then fold the bottom up and over the filling, and finally roll it up tightly.
  8. 8. Repeat with the remaining tortillas and fillings.
  9. 9. Serve immediately with salsa, sour cream or Greek yogurt, and sliced avocado.
